Night-Blooming Fragrance
Dancongs are often bestowed with a name originating from myth, terroir, shape, or color; this one, named for its fragrance, is as mystifying as its fellow varieties. The namesake of Ye Lai Xiang (yuh lie shyong) is night-blooming jasmine: an inherently heady, sensuous evergreen. It’s an uncommon cultivar in an already uncommon garden—plucked from a small, dedicated plot of august, old trees within his legacy groves, our longtime Phoenix producer, Mr. Chan, transforms the traditional practice through his modern processing techniques. Evoking a warm summer night of full-bloom flowers, Ye Lai Xiang has notes of jasmine rice, vanilla pudding, and star anise.
