Mr. Yuki's Kabusecha
Tucked away in the forested hills outside the ancient capital of Nara lies the tiny village of Dosenbo, home to Mr. Yuki and his varietal gardens. The area is known for its sandy topsoils, allowing for ramified root systems into nourishing subsoil layers. Though Yuki is celebrated for his full-sun Sencha productions, this Kabusecha was shaded twenty days before harvests. The resulting tongue-coating umami is irresistible, with on-point astringency to sustain the lingering honeydew. Mr. Yuki relies simply on alpine aspect for diurnal shift, heightening the elegant sweetness of the Kanayamidori variety. Notes of honeydew melon, red mizuna and fresh cut stems.
