Master Omura's Gyokuro
In the shade of Mount Fuji and the nurturing oceanic climate of Shizuoka, Omura-san has been the master of the region for traditional gyokuro production. With decades of craftsmanship under his belt, his tutelage is sought out for this endangered tea subcategory. Gyokuro is notoriously difficult to perfect, especially since it necessitates considerable time investment. However, Omura-san's handwoven straw-hatch tatami mats which farms set up every season, delicate steaming, and hand-rolling makes for an undeniably umami-rich, sweet tea broth evocative of each Shizuoka spring. Notes of kombu, tomato and chicken soup.
