Daejak, or “big sparrow’s tongue,” is named for its large, mature leaves. Typically, this summer solstice harvest is mild and hardy; yet, in the heirloom gardens of our dear friend, Mr. Cho, is a rarity. Heirlooms are notoriously tricky to cultivate--due to their and the season’s unpredictability, the ensuing crop is not guaranteed. However, Mr. Cho, both teacher and tea master in Hadong, tamed the feral bushes into a gentle green tea to sip, savor, and re-steep. Notes of roasted Brussels sprouts, corn husk, and miso.
