Toyo describes a flavor that is rich, full and umami. Cultivated in Wazuka Town, our Toyo Mukashi is hand picked during the first spring harvests. Half Saemedori cultivar and half Yabukita, the tea is shaded for thirty days, harvested and then stone milled by hand. Due to the heat produced from milling, only 30 grams can be produced per hour. Our producer, Yuu Kobayashi is one of ten "10 Level" certified tea tasters in Japan. His gift in judging and in blending lots for desirable flavor profile is singular, his family's business tracing its roots to 1827.
