Yame is lauded for its gyokuro production — a specialty over eight centuries in the making. The region is nestled in the mineral-rich soil of Chikushi Plains, where the Chikugo and Yabegawa Rivers flow inward to the mist- and mountain-enveloped village. Besides the rigorous adherence to artisanal methodology in this matcha’s processing, the Yamaguchi family only produces 30 kilograms per year, with a majority of the quantity allocated for traditional practitioners of chanoyu. From the manual construction of elevated bamboo shades, to the hand-plucking of the chlorophyll-rich leaves, to the slow-and-steady churn of stone-grinding, these arduous efforts produce a tea that reflects the ephemeral and the sensuous. Notes of tart strawberry, toasted walnut, and blanched watercress.

Brewing Recommendation:

Traditional Hot Whisk (usucha) - 2g, 3oz water, 170 degrees- prepared using Matcha Set.

Shaken over ice - 2g, Ice, 6-8oz water - shaken vigorously and served neat.
