Yellow Tea

Closely related to green tea processing, yellow tea is defined by a process called Men Huang (闷黄), a mellowing of freshly fired tea sprouts by bundling them together while still warm and moist, which reduces the grassy and tannic bite of erstwhile green tea. Yellow tea has been treasured by Chinese tea culture for centuries and is mentioned by the tea sage, Lu Yu, in his eighth century magnum opus, "The Classic of Tea".
