We work directly with producers from many different regions—each with their own terroir and processing techniques. Each step of the Japanese tea supply line is highly specialized. It is not unusual for the farmer, steamer, blender, and finisher to be different tradesmen, with years of apprenticeship in their respective discipline. However the tea plant came to Japan (there is debate on its origin), there are now hundreds of identified cultivars—each with their own optimal growing conditions and flavor profiles.
Highly efficient, great Japanese producers leave little waste—nearly every harvest and each part and byproduct of tea production is optimized for market. In the world of tea tastes, the Japanese occupy their own niche. The flavors are lively and immediately distinct: deep umami, fresh and vegetal, seaweedy and savory.
