In the northwest of Kyushu, Saga is a renowned prefecture for its ceramic production. In the village of Arita, the creation of porcelain, or crushed stone mixed with a silicate clay called kaolinite, is a namesake industry in its pottery-related perfection. This unusual clamshell-shaped shiboridashi is classical in shape, yet modern in design, with a textured, shallow clay bowl and a hand-etched glazed interior, smooth, shiny, and sturdy like a tortoise's shell. In Japanese, shiboridashi can translate to "treasure jar"--unarguably, Shiro Stripu (lit. "white stripe") is a beautiful piece to pour and preserve. Each shiboridashi is hand-helmed, making its lattice-work perfectly imperfect.
Due to its wide, shallow mouth, like cupping water within a palm, this artisanal shibo brews gyokuro (kabusechas too) through a gaiwan-esque interpretation. Steeped slowly, in heavy doses, and filtered in thick, soup-like droplets, the rich, savory, and unctuous taste of a good gyokuro becomes sublime.
