Laboriously charcoal-roasted over the course of 20 days, Water Sprite (Shui Xian, shwee-SHIEN) is on the darker side of the oolong family spectrum. Its birthplace, Wuyi, is a region fabled for its legendary mountainsides, spring water, and mineral-rich soil. With the variety flourishing in the crevices of the rocky terrain, its mere existence can be seen as a testament to the name given by the locals: “Praying to the Immortals.” Only a group of such significant mythology would be capable of creating a yancha embodying the “rock bone and floral fragrance” of its terroir. Long lasting hui gan and incredible plush florality when brewed in a gaiwan. Notes of dried apricot, juniper, and lavender.
