Mr. Fang Guoqiang began his career as a logger, floating atop his day's work from Anhui to market in Zhejiang. Unhappy, he eventually left logging to start a business where he could honor trees and humanity's connection with the earth. His all-organic Taiping Houkui farm (lit. "Benevolent Monkey King") produces some of the most notable examples of the style in the region. The very steep mountainsides, well-drained soil and indirect sunlight of Huangshan are ideal for green tea production. The standard of three leaves to one bud is plucked slightly later in the spring flush to allow for growth and turgidity. These leaves are wok fired, shaped and softened. They then undergo a slow baking process for dehydration and aromatization. Baked leaves are placed between two steel screens similar to a screen printing machine and flattened to their famous shape. Leaves are then left for a final resting and shelf stabilization in a limestone and bamboo container for a result that is entirely transcendent.
