Opening a new coffee shop is no small undertaking - from the design and buildout, purchase of equipment, to the hiring and training of staff,  and never mind getting all the proper permits and passing inspections - selecting an appropriate tea vendor can quickly become an afterthought to cafes.

Luckily we are in 2016 and Specialty Tea has never been more popular in America.  More than ever before customers are demanding a tea program that aligns with their quality expectations of coffee.  Potentially more exciting is that Millennials are the first generation to consume equivalent servings of tea as they do coffee.  

The amount of vendors are seemingly limitless but as you dig deeper you will soon realize there is a huge quality gap in the industry.  Flavored teas are an easy choice but do not very well represent the quality standard most cafes set for their coffees.  Here are a few important items to consider when setting up your tea program for your coffee shop. 

Single Origin vs. Blended Teas

For many cafes they make the simple choice and just add a selection of teas that have fruits, flavors, and oils added to them.  At this point you will see teas like 'white peach,' 'apricot green,' and 'earl grey.'  

The top cafes in the USA are beginning to take their tea programs more seriously.  Not only are they eliminating all flavored options - they are showing ways in which tea has many flavor profiles and origin stories.  

Many people will look at the price point alone and write off the single origins - but the truth is the margins are sometimes 3-4 times better going the single origin route.
