Chiyo Mukashi Matcha

from 40.00

In Japanese, the word "chiyo" means 1,000 years or an eternity—fitting, considering the Japanese have been proudly growing and producing tea for a thousand years. Mukashi means, simply, halcyon. The Chiyo Mukashi is our first, true ceremonial matcha.

Cultivated in Wuzaki town in the Kyoto prefecture, our Chiyo Mukashi is picked during the first, early spring harvests. To create a consistent flavor profile in something as temperamental as a green tea suspension, masterful blending of harvests is key. Our lot includes Yabukita, Gokou, Sayamakaori, Okumidori and Saemidori varieties.

The traditional of a Japanese Tea Ceremony, matcha is made when shade-grown Japanese tea leaves (Gyokuro) are deveined (Tencha) and then stone-ground into a fine powder. The idea is to take use of a small amount of matcha and dissolve it into water.  The resulting infusion is super-rich in chlorophyll, caffeine, and amino acids.

Notes of Nori, and Honeydew Melon.
