Born in Wazuka Town, refined in Kyotanabe—the Izumi no Shiro matcha comes from a masterfully blended selection of tenchas (dehydrated, deveined tea leaves that are stoneground to become matcha). Our blender, Yuu Kobayashi is one of about 10 people in Japan to hold the premier 10-level rank for tea leaf appraisal. The ability to envision a harmonious assimilation of several different harvests from the region, served eventually as a powdered suspension is an uncommon gift. Izumi no Shiro means "Wellspring of White".
