Eric Chan is a young, third-generation grower in the venerable Phoenix Mountain Range of Guangdong. He melds a reverence for the centuries-old varietal oolong with a young thirst for experimentation. It's his fifth year as head of the farm and already he is receiving acclaim for his work. The style, Gui Hua Xiang, is the "osmanthus fragrance" and it is lucky to find the cultivar in or out of China. Those who know the secrets of its cultivation: mist, decent though not excessive elevation and control of the painstaking rolling and baking process are few and far between.
