During Japanese green tea production byproducts are created during each step of refinement and there is very little left to waste.  This incredibly efficient process separates stems from leaves for consistency in taste. Karigane is a style produced entirely from stems. Contrary to expectation, the stems hold a higher concentration of amino acids than the leaf, infusing deep umami flavor in the cup. This Karigane was produced from a Gyokoro lot of the Yabukita Cultivar Sencha.  Because the Gyokuro is shaded for 3 weeks prior to production, the amino acid content is particularly high creating an outstanding melon aroma.
