This fresh, single field, single cultivar, first-pick sencha comes from the high hills of Dosembo in the Soraku District. The old style of growing sencha in full sun is rapidly falling out of mode in Japan (trending towards soupy, umami-forward tea) but Mr. Yuki insists on the beauty of old style production. The area, which is the highest growing region in the Kyoto Prefecture, is known for its sandy and rich soil, allowing for excellent water distribution and complex root systems ideal for the plants. Mr. Yuki is a master roller—this tea touts some of the best shape, color and integrity we have encountered. Fixed with a light steaming (asamushi) and finished with a gentle hiire —the natural resplendence of the land is allowed to shine.  The combination of elements results in a clean, mellow cup with syrupy sweetness and nuance.
