The resplendent Sun Moon Lake, situated in the middle of Taiwan, is the honorary epicenter of black tea production on "the beautiful isle." This 'Taiwanese Tea Extension Station 18', better known as "Red Jade" or "Ruby" is one of the most beloved black tea varieties bred by the TTES. The climate around Sun Moon Lake is relatively cool for Taiwan— instilling dynamic taste. Lower elevation and good sun exposure helps the plant to develop flavanol content; the raw material of black tea body and structure. The Yang family are some of our favorite producers in the region (Clear Heart, Wild Assam, Wild Mountain), creating naturally organic, heirloom style black tea with the expertise of generations. We like this particular variation of the Ruby, because the signature Spearmint note is less prominent than usual, allowing room for sweetness and structure in the cup. This year's lot touts a long-lingering aftertaste of honey.
